We use a particular and special kind of pasta. It is a homemade pasta, produced with old techniques of production and therefore in limited quantity.

Only a few restaurants can use this kind of pasta.

Its characteristics make any seasoning excellent, simple or elaborate.

Its slightly underdone cooking and its characteristic of absorbing flavours allow one to taste all the these, separately, but at the same time bound together in a harmonious way.

We serve pasta seasoned in accordance with old Neapolitan recipes, but we suggest you try it seasoned only with white cheese like the ancient custom of macaroni pedlars.
